Sweet and Spicy Roast Nuts

Shiny, crispy nuts coated in a delicious sweet and spicy combination of honey, chilli, smoked paprika, salt and cinnamon. These incredibly moreish treats are prefect with a glass of something bubbly and works with beer, champagne or even sparkling water.

They store well for a few days in an airtight container, but I very much doubt they will last that long! They also make a fun gift, either for Christmas or if you are visiting someone’s house – although that is not very likely in this year of Covid 2020! Oh well – all the more for you to eat at home! Every cloud has a silver lining!!

How to make Sweet and Spicy Roast Nuts:

Collect all your ingredients together:

  • mixed nuts – I used walnuts, almonds and cashews
  • honey
  • olive oil
  • cinnamon
  • ground cloves
  • powdered ginger
  • chilli flakes
  • smoked paprika
  • freshly ground black pepper
  • fine salt

How to make these delicious nuts:

  1. Tip the nuts into a mixing bowl and add the honey and some olive oil.
  2. Mix thoroughly until all the nuts are coated in the oil and honey mix.
  3. Tip out onto a baking parchment lined baking tray and spread the nuts out so they are not touching. Put in the oven for 10 minutes.
  4. After 10 minutes, remove from the oven and stir well. Spread the nuts out again and put back into the oven for 5 minutes.
  5. As the nuts cook, pour the remaining oil into the mixing bowl. You can use the same mixing bowl – there is no need to wash it.
  6. Add the spice mix and stir thoroughly.
  7. When the nuts have been roasting for a total of 15 minutes, remove from the oven and add to the spice and oil mix.
  8. Place back on the baking tray and spread out.
  9. Bake for a further 10 minutes, giving them a stir after 5 minutes. Leave to cool and dry on the tray. Any extra liquid on the nuts should be absorbed.
  10. Serve!

Ingredients

Nut mix:

  • 200g mixed nuts. I used walnuts, almonds, cashews
  • 1½ tablespoons honey
  • ½ tablespoon olive oil

Spice coating:

  • 1 tablespoon olive oil
  • 1½ teaspoons cinnamon powder
  • ¼ teaspoon chilli flakes
  • ¼ teaspoon smoked paprika
  • ¼ teaspoon freshly ground black pepper
  • ⅛ teaspoon powdered ginger
  • ⅛ teaspoon ground cloves
  • ⅛ teaspoon fine salt

Instructions

  1. Collect together your equipment (see Recipe Notes below) and ingredients.

  2. Preheat oven to Fan Oven 150°C/170°C/375°F/Gas 5

  3. Prepare and cook the nuts: tip the nuts into a mixing bowl and add the honey and olive oil
