Quick Indonesian Sesame Ginger Noodles with Fried Egg

Delicious egg noodles, sesame seeds, garlic, ginger and spring onions coated in kecap manis and soy sauce, served with egg – either cooked with the noodles or fried separately and served on top. Sweet and salty, these wonderful noodles come together in minutes and can be easily adapted to include additional vegetables, some sliced, cooked chicken, salmon or prawns, or even add some cashews or peanuts. Use this recipe as a base and make them your own!

If serving with a fried egg on top, this dish is better eaten immediately. If you are making the noodles in advance, for a packed meal/picnic, it works better with the egg stirred through the noodles or perhaps the noodles without the egg. Either way, it makes a delicious meal on the run.

This is another recipe in my series of quick recipes for Charlotte and Emma. Emma is a pescatarian whereas Charlotte enjoys meat too, so this recipe is perfect and easily adaptable for both of them.

How to make Quick Indonesian Sesame Ginger Noodles with Egg

Collect your ingredients together:

  • toasted sesame seeds
  • neutral oil eg olive, vegetable, avocado, coconut
  • dark sesame oil
  • fresh ginger, peeled and grated
  • garlic clove, peeled and crushed
  • dried chilli flakes (or more if you want extra heat)
  • prepared cooked noodles
  • soy sauce
  • kecap manis/sweet soy sauce
  • shredded coriander, parsley or basil or a mix of all 3
  • spring onions, peeled and finely sliced
  • salt – if necessary
  • freshly ground black pepper
  • egg
  • extra neutral oil eg olive, vegetable, avocado, coconut
  • Any extra vegetables such as frozen sweetcorn, peas, sliced red pepper/capsicum, mange tout, broccoli, sugar snap peas, mini sweetcorn

How to make these delicious Quick Indonesian Sesame, Ginger Noodles with Fried Egg

  1. Tip the sesame seeds into a dry pan and cook over a moderately hot heat, stirring frequently, until lightly browned. Tip out of the pan/wok and set aside.
  2. Add the oils to the pan along with the crushed garlic, grated ginger and chilli flakes. I like to grate the ginger directly over the pan to catch any precious juices.
  3. Cook over a moderate heat for 1 minute until aromatic.
  4. Add the noodles, soy sauce and kecap manis. Mix well and heat everything through.
  5. If adding a fried egg – at the same time, heat some oil in a separate pan over a moderately hot heat and add the egg. Cook either sunny side up or flipped until cooked to your liking.
  6. Add the spring onions, fresh herbs and toasted sesame seeds and stir into the noodles. Taste to see if you need to add extra salt and pepper.
  7. Serve garnished with sliced spring onions and extra sesame seeds and, if chosen, with the fried egg on top.

Quick Egg Fried Noodles with Sesame and Ginger

How to make these delicious Quick Egg Fried Noodles with Sesame and Ginger:

  5. If adding egg – push the noodles and vegetables to the side of the pan/wok, add a little extra oil and tip in the beaten egg.
  6. As the egg starts to cook, move it around the pan with a spatula.
  7. When the egg is cooked, add the spring onions, fresh herbs and toasted sesame seeds and stir into the noodles with the egg. Taste to see if you need to add extra salt and pepper.
  8. Serve garnished with sliced spring onions and extra sesame seeds.

Ingredients

  • ½ tablespoon toasted sesame seeds
  • 1 teaspoon neutral oil eg olive, vegetable, avocado, coconut
  • 1 teaspoon dark sesame oil
  • 6g – 10g fresh peeled ginger, grated
  • 4g/1 plump garlic clove, peeled and crushed
  • ⅛ teaspoon dried chilli flakes (or more if you want extra heat)
  • 150g prepared cooked noodles
  • 1½ teaspoons soy sauce
  • 1½ teaspoons kecap manis/sweet soy sauce
  • 2 tablespoons shredded coriander, parsley or basil or a mix of all 3
  • 1 – 2 spring onions, peeled and finely sliced
  • pinch of salt – if necessary
  • freshly ground black pepper
  • 1 extra teaspoon neutral oil eg olive, vegetable, avocado, coconut
  • 1 egg
  • Any extra vegetables such as frozen sweetcorn, peas, sliced red pepper/capsicum, mange tout, broccoli, sugar snap peas, mini sweetcorn

Instructions
