Macerated Roast Blueberries
Macerated Roast Blueberries are the perfect accompaniment to game, but are also delicious with pork, and I love them with roast chicken and a cheesy nut loaf! Heck, pour on some cream or ice cream, and they make an amazing dessert!
Grilling and macerating the blueberries, with a touch of sugar and vodka, concentrates and enhances their flavour and texture; they bring a welcome, sweet, fruity balance to a range of protein rich meat dishes. They are also exceptionally quick and easy to make; you’d be mad not to!
How to make Macerated Roast Blueberries
Collect all your ingredients together:
- fresh blueberries
- caster sugar
- vodka
How to make this wonderful condiment:
- Pre-heat the grill to a high heat.
- Scatter the blueberries on a baking tray and sprinkle on the caster sugar.
- Place under a pre-heated grill and cook until the blueberries have burst – this will take around 5 minutes.
- Tip into a small bowl, leaving behind any burnt sugar and juice from around the edges.
- Sprinkle over the vodka and set aside to macerate.
- Delicious served with game.

Serves 4 as an accompaniment to a main dish, and 1 for dessert
Ingredients
- 200g fresh blueberries
- 1 tablespoon caster sugar
- 1 tablespoon vodka
Instructions

Collect together your equipment (see Recipe Notes below) and ingredients.

Pre-heat the grill setting, on your oven, to high.

Scatter the blueberries on a baking tray and sprinkle on the caster sugar.

Place under a pre-heated grill and cook until the blueberries have burst – this will take around 5 – 10 minutes.

Tip into a small bowl, leaving behind any burnt sugar and juice from around the edges.

Sprinkle over the vodka and set aside to macerate. Set aside for a minimum of 10 minutes, but ideally for an hour or more.

Delicious served with game, other roasts, such as pork or chicken, and cheesy nut loaf.
