Gremolata
Gremolata is a fresh and zingy, parsley, lemon and garlic condiment delicious with fish, chicken, drizzled over roast, crushed new potatoes or mashed potatoes and a traditional accompaniment to the classic Milanese dish Osso Bucco.
Quick to whip up using easily obtainable ingredients, this is a wonderful recipe to keep in your arsenal to add that touch of ‘WOW’ to a simple and speedy supper.
How to make Gremolata
Collect all your ingredients together:
- fresh flat-leaf parsley, thick stems removed
- garlic cloves, peeled
- lemon zest
- olive oil
- salt and freshly ground black pepper
How to make this tasty condiment:
- Place the peeled garlic in a food processor and blitz until finely chopped.
- Add the parsley and blitz again, until finely chopped.
- Add the lemon zest, sufficient olive oil to get the consistency you are looking for and some salt and pepper.
- Blitz again. Taste and adjust seasoning, if necessary.

Ingredients
- 25g fresh flat-leaf parsley, thick stems removed
- 6g/2 garlic cloves, peeled
- zest of 1 lemon
- 1 – 2 tablespoons olive oil
- salt and freshly ground black pepper
Instructions

Collect together your equipment (see Recipe Notes below) and ingredients.

Place the peeled garlic in a food processor and blitz until finely chopped.

Add the parsley and blitz again, until finely chopped.

Add the lemon zest, sufficient olive oil to get the consistency you are looking for and some salt and pepper.

Blitz again. Taste and adjust seasoning, if necessary.
