Chicken, Brie, Cranberry and Chilli Sandwich with Spinach and Mayonnaise

OMG – just had this for my lunch and, not going to lie, it was epic!

A hot sourdough baguette sandwich filled with chicken, Brie, some amazing Cranberry and Chilli Sauce from @gochcompany, wrapped in foil and heated in the oven until everything is warm and the cheese has melted. Remove from the oven and add some baby spinach leaves and a squirt of mayonnaise. Sooo good!

This Cranberry and Chilli Sauce is ridiculously delicious – I wish I had opened the jar sooner – saving it until Christmas was a mistake! It is made purely from cranberries, sugar and chilli. The flavour of cranberries bursts through and is lifted with a lovely kick from the chilli. I am so going to try making this next year – or maybe I’ll just buy a big jar from @gochcompany! 

The chicken and sausage was leftover from the Roast Chicken Dinner I posted yesterday – it really worked an absolute treat. It would also be wonderful with leftover turkey, stuffing and cranberry sauce, but do add a little chilli kick as well!

It doesn’t need a recipe – just compile to suit your hunger levels – but a few pictures to guide you!

  1. I used a toasted sourdough baguette. Slice the chicken or turkey and lay on the base of the baguette.
  2. Top with sliced Brie and on the other half of the baguette, spread a thick layer of Cranberry and Chilli Sauce.
  3. Place the top of the bread on the sandwich and place in the centre of a piece of foil.
  4. Wrap in the foil and cook in the centre of an oven preheated to Fan Oven 180°C/200°C/400°F/Gas 6 for 15 minutes until the sandwich is hot and cheese has melted.
  5. Remove from the oven and take out of the foil.
  6. Remove the top piece of bread and add some fresh spinach and a squirt of mayonnaise.
  7. Eat and ENJOY!

Ingredients

  • baguette
  • cooked chicken/turkey
  • sliced Brie or Camembert
  • stuffing, if you have any
  • cranberry sauce
  • fresh spinach
  • squirt of mayonnaise

Instructions

  1. Collect together your equipment (see Recipe Notes below) and ingredients.

  2. Preheat oven to Fan Oven 180°C/200°C/400°F/Gas 6

  3. Slice the baguette in half horizontally. I used a sourdough baguette.

  4. Slice the chicken turkey and lay on the base of the baguette.

  5. Top with sliced Brie and on the other half of the baguette, spread a thick layer of Cranberry Sauce.

  6. Place the top of the bread on the sandwich and place in the centre of a piece of foil.

  7. Wrap in the foil and cook in the centre of the preheated oven for 15 minutes until the sandwich is hot and cheese has melted.

  8. Remove from the oven and take out of the foil.

  9. Remove the top piece of bread and add some fresh spinach and a squirt of mayonnaise. Place the top back on.

  10. Eat and ENJOY!
