Aspic by Quentin Giroud, Paris
Andrew and I were so excited to be back in Paris after a rather long hiatus due to Covid. We came to celebrate our 25th wedding anniversary and started our long weekend with a bang at the fabulous Apsic, a small 1 star Michelin restaurant in the 9th district in Paris. With only 20 covers, chef Quentin Giroud and his small team produce an amazing 7 courses using local, fresh, seasonal ingredients. There is no menu, this wonderful selection of food is explained to you by their impeccable and friendly waiting staff, as it is served.
We chose the wine pairing to accompany the food. Given you do not know in advance what you will be eating, I really recommend this option. We drank a selection of white and red wines from small, French winemakers which worked deliciously well with the food.
It is difficult to pick a favourite from our incredible menu but I have to say the roasted cuttlefish with romesco sauce and the Auvergne blue cheese with white chocolate ganache, blew my mind.
Noirmoutier island sea salt homemade brioche buns, kaffir lime home-made butter, cured pork loin Mini “Bokit” bread stuffed with lime cream, wasabi flying fish caviar, green shiso.
Lemongrass infused melon, smoked cured duck breast, croutons, red pepper sorbet, candied lemon, fried bronze fennel leaf. Slow cooked then roasted cuttlefish, romesco sauce, dried tomatoes, toasted buckwheat, red currants.
Line-caught yellow pollack, confit leak with seeds and raisins, “barigoule” artichokes, fried artichokes, white wine and vermouth sauce. Roasted salad, herbs and bottarga breadcrumbs, pickled red onions, grapefruit, confit egg yolk, tonka seed infused reduced orange juice.
Iberico pluma, sand carrots and black butter purée, pickled plums, fried sage, veal jus. Auvergne Blue cheese and white chocolate ganache, Sichuan pepper poached peaches, honey crisp, basil sorbet, lemon balm.
Vanilla bean poached Mirabelle plums, verbena and almond cream, candied ginger, almond biscuit, puff pastry, Mirabelle plum spirit sorbet. Vanilla bean and caramel choux pastry, chocolate and cardamon truffle.
